The History and the Link Grown between 1700 and 2000 meters above sea level, amidst the mist of the Colombian Andes and volcanic soils, the Castillo variety is a strong plant that defies the heights.

For the ancestral Inga d'Aponte community, this coffee represents a miracle of peace: guided by their leaders, they chose to eradicate illicit crops and the conflict that plagued their territory, healing their land through specialty coffee.

Today, this lot arrives at our roastery in Quebec to complete its metamorphosis in small 10 kg batches. Subjected to the heat of a medium-light roast, the bean lives out the perfect analogy of the immigrant: it faces the pressure of high temperatures not to destroy itself, but to shed its layers and release the complexity, aromas, and sweetness it has always carried within.
